The list of all open buy and sell orders for a security, sorted by price.
The order book shows the bid side (buy orders, highest price first) and the ask side (sell orders, lowest price first). The best bid and best ask form the quote; when a buy and sell order meet in price, they are matched and disappear from the book. How many shares wait at each level – the depth – shows how liquid a stock is.
